This side is quick to make and easy on the calories and carbs with only 27 calories and 6 grams of carbohydrates per serving! This should be a staple in a your daily diet! Start it before you prep the rest of dinner and it will be done by the time you sit down!
***Leaving the marinade in the bowl drastically reduces the sodium levels***
Ingredients
1 English cucumber
1 container grape tomatoes
1/2 red onion
2 tbsp white vinegar
1 tsp salt (or to taste)
Directions
1.) Score cucumber lengthwise with fork (run fork along length of cucumber to create grooves in the cucumber; do this all the way around the cucumber)
2.) Slice cucumber according to preference (sliced or cubed works)
3.) Thinly slice onions
4.) Cut tomatoes in half
4.) Add onions, cucumber, tomato, vinegar and salt
6.) Allow to marinate, mixing periodically (15 minutes)
**Scoring breaks down the skin and allows for better acid absorption…don’t skip this step** **May substitute lemon juice for vinegar**
**May garnish with flat leaf parsley or cilantro for added flavor**
