This salad is anything but boring. Packed with flavor and full of your vegetable servings, this easy easy to prep meal has only 490 calories and 15 grams of carbohydrates per serving! And with 28 grams of protein, it’s sure to fill you up!

**Sodium, fat and cholesterol levels likely lower as most of the dressing  doesn’t get consumed**

Salad Ingredients

  • 1 head romaine lettuce, roughly chopped
  • 1 head red leaf lettuce, roughly chopped
  • 3 cups grilled or shredded chicken
  • 2 green bell peppers (large chopped)
  • 1 red onion (thinly sliced)
  • 1 package grape tomatoes (cut in half)
  • 1/2 cup pepperoncini peppers
  • 1/2 cup greek olives
  • 1/2 cup black olives
  • 1 cup feta cheese

Dressing Ingredients

  • 1 tbsp dijon mustard
  • 1 cup red vinegar
  • 2 tbsp white vinegar
  • 2 tbsp lemon juice (fresh)
  • 3/4 cup olive oil
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp salt
  • 2 tsp oregano
  • 1 tsp pepper

Directions

1.) Place all dressing ingredients in bottle and shake well

2.) In large bowl, combine lettuce and all salad ingredients except the chicken and feta cheese

3.) Pour part of the dressing overtop of the salad and toss until lightly covered

4.) Top lightly dressed salad with chicken and cheese

5.) Serve with remaining dressing for people to use to taste
