This party favorite is easy to make and one of the first plates cleared! With only 4 G carbohydrates, it’s easy on your blood sugars too!

Ingredients

  • 12 hard boiled eggs

  • 1 avocado

  • 2 tbsp greek yogurt or sour cream 

  • 2 tbsp mayonnaise or Miracle Whip

  • 1/2 lime (Juiced)

  • 1/2 cup chopped cilantro

  • Diced jalapeno (optional)

  • Salt to taste

  • Paprika to taste

Directions

1.) Cut eggs in half, remove yolks and place yolks in bowl

2.) Cut avocado, remove pit and scoop out into bowl with yolks

3.) Add yogurt, mayonnaise lime juice, cilantro and jalapeño and salt to bowl

4.) Mash ingredients together until smooth (blend together if preferred) 

5.) Pipe mixture into egg halves and sprinkle with paprika
