3 cups shredded chicken (prepared: check out our food prep blog here for details)
1/2 cup red onion (thinly sliced)
2 cups prepared coleslaw
3/4 cup shredded cheddar cheese
1 jalapeño (sliced)
1/4 cup chopped cilantro
Directions
1.) Preheat oven to 425°F
2.) Poke holes in potatoes with fork and bake for about 1 hour
3.) Remove potatoes from oven and slice lengthwise
4.) Top with chicken, red onion cheese and jalapeño and BBQ sauce
5.) Bake for an additional 10 minutes (or until toppings are hot and cheese is bubbling)
6.) Remove from oven and top with coleslaw and cilantro
7.) Enjoy
