This spin on a fan favorite is perfect for game day or just a mid-week meal that is easy to prepare and even easier to eat! With 25 grams of protein and only 23 grams of carbohydrates, it’s a good recipe to have in your rotation! 

Ingredients

  • 1lb ground beef
  • 1 packet taco seasoning
  • 1 head cauliflower
  • 1 tsp of each of the following: cumin, onion powder, garlic powder
  • 1/2 tsp of salt
  • 1 can refried beans
  • 1 cup cheddar cheese
  • 1 jalapeño pepper (thinly sliced)
  • 1 cup fresh diced tomatoes
  • 1 cup salsa of choice
  • 1 small can black olives
  • 1/4 cup sliced green onions
  • Optional Toppings: red onion, sour cream, guacamole cilantro

Directions

1.) Preheat oven to 400° degrees

2.) Thinly slice cauliflower and toss in olive oil, salt, cumin, onion powder and garlic powder.

3.) Bake on cookie sheet for approximately 15-20 minutes until just tender and starting to brown

4.) While cauliflower cooks, prep ground beef according to taco seasoning packet.

5.) Remove cauliflower from oven and layer taco meat and refried beans on top. Cover with cheese and sprinkle jalapeños on top.

6.) Bake for an additional 5-10 minutes (until cheese is melted and bubbling)

7.) Top with remaining toppings and serve.
