This recipe cuts out sugar by using coconut milk and extra dark chocolate. They are quite rich and will quickly satisfy that sweet tooth craving. With only 6 G of carbohydrates, they are a sweet treat for special occasions.

Ingredients

  • 8 ounces dark chocolate (85% or higher)

  • 6 tbsp coconut milk (canned full fat)

  • 1 tsp Vanilla

  • Nuts, cocoa powder, unsweetened shredded coconut for coating

Directions

1.) Place chocolate in microwave safe bowl and heat on 50% power for 1 to 2 minutes (until soft)

2.) Heat coconut milk for 1.5 minutes or until milk is piping hot (near boiling)

3.) Pour hot milk over chocolate and mix until completely melted

4.) Add vanilla

5.) Refrigerate until set (approximately 1 hour)

6.) Using cookie scoop, scoop out walnut sized balls and roll into coating

You won’t even miss the sugar. So rich and creamy. I don’t know how this recipe makes it happen but these truffles are made of magic. They do melt easily so keep them away from heat or keep them in your fridge. Do not plan to share these. You will regret it if you do! Simply delicious.

While they do still have some sugar in them (because carbs=sugar), the dark chocolate and coconut milk help cut a lot off! We are so glad you enjoyed them!
